We will always remember

German Type Emu Burgers (Frigadellen)                                                                              

(from the kitchen of Anne C. Weber, Baranca Acres Ltd.)
Mix in a large bowl:
      Very small chopped

1 small Tomato.
3 petite Dill Pickles.
1 medium Onion.

 ..and.. 

2 lbs ground Emu Meat.
1/2 cup unflavored Bread Crumbs.
3 tbsp KC Masterpiece Barbecue Sauce or your favorite one.
1/8 tsp Garlic Powder.
11/2 tsp Salt.
1 lightly beaten large Egg.


Brown in frying pan with a little Olive Oil (we use extra virgin olive oil).
During browning sprinkle generously with Paprika.

Emu Burgers     also: Cheese-Emu-Burgers

Make and serve as you are used to, just remember:  high heat - short time.
Make sure you have some fat or oil in the pan, the meat is 97% fat free.

and some other way
..
1 lb ground Emu meat
¼ cup unflavored bread crumbs
1 egg
any of your favorite burger spices.  Or try adding a little of your favorite barbecue sauce.
..

Mix everything together and divide into five (5) patties. 

Fry all in pan with 1 Tblsp Olive Oil about 3 minutes per side. Do not overcook. Serve as you like.
