Marinades

Tasty Marinade   (Culinary Arts Institute, New Hyde Park, N.Y.)

1/3 cup Soy Sauce                                              1 1/2 tsp ground Ginger
2 Tbsp Cider or Wine Vinegar            1/4 tsp Garlic Powder
1/4 cup minced Onion                       1 tsp Tenderizer
2 Tbsp Sugar
..
Mix and pour over (up to 2 Lbs) Emu Steak, cover and refrigerate.
Turn often while keeping refrigerated for at least 4 Hours or more.

Quick Marinade for Emu Steak   ( Andy Lo Chef-Owner Andre's Grill Richmond, VA)
..
For each Pound of Emu Meat mix:
..
3 oz cold Water                                                 1 Tbsp light Soy Sauce
1 Tbsp Sugar                                                     1 tsp Salt
1/2 tsp Tenderizer (Adolph's)                                1/2 tsp Baking Soda
a pinch of ground Pepper

Marinade for 1 Hour or more

For each pound of Meat mix an soak steak for 2 Hours or more:
..
1 oz dry red Wine                                                 Pinch of Garlig Powder
4 oz cold Water                                                   Pinch of Onion Powder
1/4 tsp Tenderizer (optional)                                  1/4 tsp Baking Soda (optional)
